To improve food literacy, raise nutritional awareness and celebrate National Nutrition Month, several student organizations will “takeover” Kimball Dining Hall on Thursday, March 21 at lunch time.
The Student Government Association (SGA), Healthy Eating and Lifestyle Peer Educators (HEAL), Student Health Awareness Peer Educators (SHAPE) and Eco-Action have come together to plan a menu based on “wholesome, real food” recipes submitted by students, faculty and staff.
Student volunteers will select, prepare, cook and serve everything for that meal.
Here is just a sampling of the menu: Cheddar, Corn & Potato Chowder by Lizzie McManus; 4Leaf Chili submitted by Professor Axelson from Healthy Eating, Healthy World; Artisan breads; Fennel Risotto by Professor Borghini; Two panini sandwiches -Mozzarella, Ham & Basil by Meghan Summerson and Roasted Red Pepper, Mozzarella & Pesto by Catherine Balch; Self-Serve Rice Bowl station by Kathy Egan and Paige Wesson; Rustic Italian Squash Flat Bread Pizza by Colleen Hynes; Roasted Chicken recipe by Michael Pollan (the author of 'The Omnivore’s Dilemma' and 'In Defense of Food' submitted a recipe.)
Sponsoring student organizations will have informational tables at the event and Professor Axelson is bringing Healthy Eating, Healthy World author, J. Morris Hicks. Mr. Hicks will discuss his “4leaf” survey with interested students and sign copies of his book.
